Fried Glutinous Rice

Fried Glutinous Rice

Ingredients:
500g glutinous rice (washed & soak for 5 hours)
150 peanuts (wash & cook until soften)
8 pcs mushroom
100g long bean
½ carrot (diced)
150g coconut milk + 1 bowl water
1 tsp chopped ginger
Some coriander or lettuce for garnish
2 tbsp margarine

Seasoning:
1 tsp salt
1 tsp sugar
1 tsp sesame oil
1 tbsp soy sauce
2 tbsp vegetarian oyster sauce
1 tbsp black soy sauce
½ tsp pepper

Method:

  1. Heat margarine in wok, sauté ginger until fragrant.
  2. Add in mushroom, carrot, long beans and peanuts; toss in glutinous rice and seasoning. Still fry until well mix.
  3. Sift the rice to rice cooker, pour in coconut milk and water, switch on the cooker; once cooked, sprinkle chopped coriander or lettuce on top to garnish.
