Stingray Fish With Fermented Soya Bean Paste

1 stingray fish
1 tbsp garlic (chopped)
1 tbsp ginger (chopped)
1 tsp chilli (chopped)
½ tsp taucu / fermented soya bean paste
100ml water
Seasoning:
½ tbsp light soya sauce
½ tbsp Shaoxing wine
1 tsp sugar
½ tsp pepper
½ tbsp cornflour
Method:
- Cut stingray fish into small pieces. Marinade with pinch of salt and ginger paste for 30 minutes.
- Heat the wok and fry the stingray fish till golden brown. Dish and drain.
- Heat up 3 tbsp oil and saute chopped garlic, ginger, chilli and taucu till fragrant.
- Add in water, seasoning and cook until the gravy is thick. Dish up.
