Fried Black Pomfret in Soya Sauce

Ingredients:
1 pc black pomfret
½ tsp salt
2 pcs big red onion (peeled and slice into ring)
½ cup water
½ tbsp dark soy sauce
½ tbsp sugar
adequate lime juice
3 pcs red chillies (wash and sliced)

Methods:

  1. Make slits on fish. Rub with salt, and deep fry. Let it rain and set aside.
  2. Heat a little oil in a wok. Add the onions and fry until fragrant. Do not let the onions brown.
  3. Add water, soy sauce and lime juice. Let the sauce warm a bit.
  4. Add sugar, salt, if using. Stir and bring into a boil.
  5. Add chillies into the sauce. Stir-fry till fragrant.
  6. Pour sauce over fish and serve with warm white rice.
