Fragrant Spicy Pandan Fish recipe

Ingredients A:
300g ikan cicaru
2-3 tbsp asam jawa juice
9 pandan leaves
1 ½ tbsp dried shrimps

Ingredients B:
20 dried chillies (soaked)
½ tbsp belacan stock granules
1 serai
3 buah keras
4 shallots
3 pips garlic
3 slices ginger
3cm fresh kunyit

Seasoning:
Salt to taste
1 tbsp sugar

Method:

  1. Clean fish and make a big slit through back.
  2. Grind ingredients B until fine.
  3. Heat 3 tbsp oil in a wok and fry ingredients B and dried shrimps until fragrant (SUNHOM cooktop, use Powder Medium Low). Remove and set aside.
  4. Stuff fried chilli ingredients into the opening of fish.
  5. Use 2-3 pandan leaves to wrap around the fish.
  6. Heat oil in a wok and fry fish until crispy and golden brown (SUNHOM Cooktop, use Powder Medium). Serve hot.
